I love breakfast! After a cold shower, a beautiful meditation and a cup of green tea, it is wonderful to sit down to something healthy and nutritious, that I know is going to set me up for at least the first half of the day.
I created this breakfast because I'm gluten intolerant and so bread and most cereals don't work for me. And if I'm coaching and teaching then fruit on its own doesn't quite cut it in terms of giving me enough energy to see me through the day.
As with all my recipes, you can play around with the ingredients, so please do let me know if you come up with some other delicious combinations!
The basis of this recipe is organic short grain brown rice. I import it from Europe (if you're headed this way and have a spare kilo of luggage allowance, I'm always extremely grateful for gifts of this special rice! :-) Once or twice a week I steam a large bowl of this rice and store it in the fridge. You can also use quinoa or other grains.
Place the following ingredients in a small pan and heat over a low heat:
- one tablespoon of rice (or more if you're hungry!)
- a handful of raisins
- a handful of soaked chopped almonds (these contain more nutrition if you keep a bowl of them soaking in water in the fridge as it encourages growth enzymes to release and there is more 'live' energy in them)
- one grated or chopped apple
- a half teaspoon of cinnamon powder
- water to just cover the bottom of the pan
On a low heat, the ingredients will steam in the water as it evaporates. Stir a couple of times to ensure it doesn't stick or burn and when it's heated through you can enjoy it as is, or with some milk and honey on top! It goes brilliantly with a cup of rooibos tea! And having a mug with my name on it helps me remember who I am first thing in the morning on those hard-to-get-started days! :-)
